2005 Domaine Pavelot 1er Cru La Dominode – Bottle Notes

There have been Pavelot’s in Savigny for many generations, this particular domaine traditionally moving from father to son. Father Jean Marc and son Hugues Pavelot are the driving force behind Domaine Pavelot at present. For a long time, the main outlet for the Pavelots was the negociants of Beaune, even 20 years ago as much as 25% of their product was sold off in bulk. Today all stays within the domaine, and production is over 60,000 bottles from around 12 hectares.

Ruby red in color. 13% ABV. Brooding nose of black fruits, menthol, forest floor and licorice. Complex, earthy and showing the big structure of the ’05 vintage. Medium body with strong acidity. Black cherry, minerals, iodine and mushrooms on the palate. Excellent length on the finish with firm tannins. Nice showing for the flagship wine of Pavelot from a great vintage. Drink over the next 3-5 years.

My rating: 91 points.

Current vintages of Pavelot La Dominode run about $60. Along with producers like Ecard and Bize I think Pavelot is one of the better values in all of Savigny.
